Lil Cheeky Ice Cream’s Roasted Strawberry Black Pepper Ice Cream

Is this what Love Tastes Like?

Even the sweetest things in this world carry a little spicy with them. 

Strawberries are roasted to intensify and sweeten their flavor. Combined with a bit of black pepper to tease your tastebuds.

Roasted Strawberry Black Pepper 

2 cups milk
2 cups cream
1 1/3 cups white sugar divided 
5 egg yolks 
1/4 tsp salt (rounded)
1 tsp vanilla extract 
2 tsp black pepper (rounded)
4 cups fresh strawberries 

Clean and destem strawberries. Cut in half. Preheat oven to 375. Place strawberries in glass roasting pan. Cover with 1/3 cup of sugar. Cook for 8-9 minutes until slighty caramelized on top. DO NOT BURN!

Remove from oven place in glass or metal bowl. Blend well with immersion blender. Set aside.

Combine 1 cup sugar, salt, milk and cream in cooking pot. Heat on medium. Mix well. While its heating, take eggs and separate the yolks. Place yolks on a bowl and whisk with a fork. Continue to heat milk mixture until it is quite hot but not a boil. A slight foam will appear.

Take mixture off stove. Pour approximately 1 cup of mixture slowly into egg egg yolks while whisking with a fork. Quickly pour egg mixture back into the pot with the milk. Heat on medium low. Use wooden spoon to stir constantly. Do not let it rest or the eggs will cook solid (gross). Continue to cook until mixture can coat the back of the spoon. 

Take mixture off stove and pour through a strainer into the blended strawberries. Add vanilla and black pepper. Mix well. Place the mixture in an ice bath until cool. Once cool, place or pour mixture into a container. 

Let it cool in the fridge for 24 hours. 

Take out and mix using your ice cream machine. 


Makes about 3 pints.
